Staying Healthy on a Low Carbohydrate Diet

It is estimated that about 32 million Americans are following some type of low carbohydrate diet. This is the result of fad diet authors claiming that carbohydrates are the cause for Americas rising obesity problems. The backlash against carbohydrates is a result of the low fat craze that started in the 80s.When consumers started cutting down their fat intake, manufacturers figured out that they could create low fat processed food products that the public would buy. Because these products claimed to be fat free, Americans didnt pay attention to the fact that they were not also calorie free, and as a result, the total amount of daily calories has slowly been increasing. In fact, although the total percentage of calories from fat has decreased, the actual amount of fat intake has increased by 10# per year since 1975! The increase of carbohydrate has also increased, at a rate of 20# per year, mostly as a result of highly processed foods.

It is estimated that 3800 calories are now produced for every American man, woman and child. We have evolved from a world of feast or famine, but were in a state of perpetual feast, although our bodies have not changed. We have no defenses against excess calories: Every year, 300,000 to 400,000 deaths in the US are attributed to obesity.

Meanwhile, Asian and Middle Eastern populations consume 50-75% of their calories from rice and have some of the lowest rates of obesity and heart disease in the world. People living in the Mediterranean also have fewer health conditions commonly seen in the US. This diet consists of whole grains, vegetables, legumes, nuts and fruits. Their diets are rich in fish and low in meats and poultry. Although their fat intake is about the same as in America, the type of fat is primarily monounsaturated fats, such as olive oil, where Americans eat primarily saturated animal fats.

Regardless of the actual advantage or disadvange to following a low carbohydrate diet, there are three recommendations for maintaining good health while following such a diet. The first is to choose healthy fats over the unhealthy, saturated fats, when considering fat intake. Examples of healthy fats would be plant fats that have not been hydrogenated, which makes the fat more solid at room temperature. It is believed that hydrogenation is actually more harmful to health than saturated fats found naturally in animal products. Plant fats would include nuts, avocados, and olives. Oils such as olive oil, canola oil and peanut oil are better choices than fats that come from animal sources, such as butter, lard or bacon grease. Multiple studies over the years have shown that excess animal fats lead to higher risks of cancer, heart disease and other inflammatory disorders. Saturated fats have been linked to increased cholesterol, LDL (the bad) cholesterol as well as to increased LDL cholesterol oxidation. In fact, in January 2004, an Atkins representative put out a press release advising the public to decrease their amounts of steak, eggs, and saturated fast to less than 20% of their total fat intake.

The next recommendation to ensure good health is to eat plenty of fruits and vegetables. Although fruits and most vegetables are restricted in the initial phase of some low carbohydrate diets, they are then allowed back in limited amounts. The phytonutrients that come from a diet rich in fruits and vegetables have been shown to decrease blood pressure, as well as protect against cancer, heart disease, diabetes, metabolic syndrome, and obesity. Its easy to add more fruits and vegetables to your diet, once you get in the habit. Examples are; add some berries to breakfast, eat a tomato at lunch, include broccoli with dinner, drink some vegetable juice with snacks, and have a large salad with your meal.

The final tip to ensure good health is to eat a diet of whole foods, rather than fall back on the easy snack, convenience foods of today. If Americans had just cut down their amount of fat intake in the 80s, without finding new ways to snack, we may not be seeing the epidemic of obesity we see, today. When people started going on the low carbohydrate diets, they eliminated a large number of calories by eliminating snacking, especially at night, where common snacks are chips, crackers, and other high fat, high refined carbohydrate foods, such as ice cream. Today, though, much like in the 80s, manufacturers are now developing low carb and low net carb snack foods. We can now find low net carb chips, crackers, ice cream, popcorn, even low carb pizza! As Americans start to increase their intake of these foods, we will soon see a slowing of the weight loss many had seen initially. In order to call themselves a low net carb food, manufacturers subtract the fiber and sugar alcohols from the total carbohydrates in the product, rather than produce products without carbohydrate. There is no actual FDA standard for what a low net carb food is, yet, though, so right now its anything the manufacturer wants to say it is. These foods also are very high in fat and saturated fat, usually through hydrogenation. So, not only will calories be added back into the diet through resuming unhealthy snack habits, but they will be calories consisting of high amounts of the unhealthy fats.

So, while following a low carbohydrate diet, in order to ensure continued good health, follow these three recommendations: 1) Make most fats you eat the healthy, plant fats, rather than eating a diet high in animal or hydrogenated fats, 2) Eat plenty of nutrient rich fruits and vegetables, which are high in disease-fighting antioxidants, and 3) eat mostly whole, fresh foods and very little processed snack foods, even if they say low carb, in order to avoid hidden and unnecessary fat and calories.

It’s Thursday afternoon, you have thirty minutes to get from
work, go by the house and pickup Heath, Jamie’s already at
basketball practice, oh, and what about dinner? Does this
scenario seem familiar? If you’re a working Mom, I can promise
that it is a familiar scene.

So how do you make healthy food choices, when you only have
fifteen minutes to prepare your meals? Well, the first thing you
should realize is that quite often, healthy choices do not
necessarily equate to two hour meals. You can make healthy food
choices that are as quick to prepare or pickup as the unhealthy
ones.

For example, sub sandwiches are a healthier alternative than
pizza or burger and fries, but do not really take any longer to
pickup. Salads can be prepared in just a few short minutes, and
provide for the necessary vegetable daily requirement. Don’ care
for the usual salad? Make a Waldorf or fruit salad, either way
you’ve changed it up a bit, and still provided a health choice.
As for the dressing, oil based or vinegar based dressings are
much better for you than the cream based, and are really more
tasteful. Okay, suppose salads aren’t what your kids like. What
about other prepared foods that are also healthy foods? Healthy
Choice is a brand of frozen entrees or meals that take only a
few minutes in the microwave to prepare, and are still healthy
alternatives. Baked rather than fried is always a better choice,
and many supermarkets today offer baked products fresh from
their bakery, ready to go.

Still aren’t satisfied? You want a place to go and actually sit
down and eat. There are still many healthy alternatives for a
family when going to eat at a restaurant. Restaurants that offer
buffet style meals are great choices. Thanks to many of the
health conscious consumers out there, buffets have added baked,
broiled, and fresh food choices to the display. Fresh fruits and
vegetables are usually always available on food bars, along with
broiled or steamed vegetables. Meats are just about as varied,
with many of the choices being offered in a fried and baked
option. And if you’re up for dessert, watermelons and grapes are
just as satisfying as the Boston cream pie.

You can always throw up objections when it comes to healthy
eating, the real trick is in realizing it’s your body that will
suffer. Or your children that will suffer from the unhealthy
choices you make. Why not start with healthy options, set the
right example, and you will have children that make health
conscious intelligent decisions about their eating.

Okay, now back to our Thursday afternoon juggling act. You’ve
dropped Heath at baseball practice, picked Jamie up from
basketball, and you have exactly fifteen minutes to make a
decision about dinner. As you sit at the red-light contemplating
your options, there is a Subway, a Pizza Hut, and a grocery
store with a deli in the same shopping center. How can this
still be a difficult choice to make?

HEALTHY CHOCOLATE FOR YOUR VALENTINE

Let’s face it. We’re all going to eat chocolate for
Valentine’s Day. But there’s no need to feel guilty!
Chocolate is actually good for youit’s all the things added
to it that are the problem. Here’s how you can choose
delicious healthy chocolates for your Valentine.

HEALTH BENEFITS

The gift of chocolate to a beloved as a token of love is
more than just tradition. Naturally-occurring compounds in
chocolate produce that mild euphoria of being in love and
contribute to enjoyable interpersonal relations by elevating
mood and enhancing sensory perception.

Beyond good feelings, chocolate benefits the body in many
ways. In moderation, chocolate can contribute to heart
health, help you live longer, suppress a chronic cough, and
add needed magnesium to your diet. Chocolate even contains a
high level of chromium, which can help control blood sugar.

Chocolate does NOT cause acne, most headaches, or
hyperactivity, and does not raise cholesterol.

HEALTH PROBLEMS

While chocolate itself is fine to eat, there are some
substances present in chocolate products that you should
watch out for.

Most chocolate products contain tremendous amounts of
refined white sugar, which is harmful to health in many
ways.

Chocolate may also contain pesticides. The EPA allows
various levels of pesticide residue to be present in cocoa
powder, and the FDA Total Diet Study found them in many
chocolate products.

Many chocolates also contain the toxic metals cadminum and
lead. “Significant levels” of these metals were found in 68%
of the common chocolate products tested. There is no safe
level for lead, and it is particularly harmful to children.

HEALTHY CHOCOLATE CHOICES

Here are some guidelines for choosing the healthiest
chocolates.

1. Choose chocolates with the least amount of refined white
sugar or other sweetener. Dark “bittersweet” chocolates with
a high percentage of cocoa solids (usually the label will
state the exact percentage) have less sugar than semisweet
or milk chocolate and also have the greatest health
benefits. Keep in mind that flavor additions, such as dried
fruits and candied ginger may also add sugar to the
chocolate.

2. Choose chocolates sweetened with evaporated cane juice or
barley malt. If the evaporated cane juice used is the
unprocessed whole juice of the cane, it acts in the body
like a whole food and doesn’t give a sugar rush. Barley malt
is also a slow-release sweetener, noted on the label as
“grain-sweetened.”

3. Choose organic chocolates. Certified organic chocolate
ensures there are no harmful pesticide residues.

4. Make your own chocolates. It’s easy to make many
chocolate delights yourself, with the exact ingredients you
want. Start with unsweetened cocoa powder or baking
chocolate and be creative!

SAVOR YOUR CHOCOLATE

Fine chocolate is one of those earthly pleasures to be
savored. When eaten as a special treat, with full
appreciation, a little chocolate can go a long way.

Choose quality over quantity. If you are going to eat
chocolate, eat really good chocolate. Then, for maximum
enjoyment, give the taste of the chocolate your full
attention, eat it at a time when you are not famished or
overly full, and allow the chocolate to melt in your mouth
to make the experience last.
